Thai Red Curry


  • 2 bags of baby corn, fresh
  • 2 bags of greens – mange tout preferably, fresh
  • 1 carton of button mushrooms
  • Bag of frozen king or large prawns (about £3 in Aldi or Lidl)


Wash and wok your veg and prawns in olive oil for around 20 mins on low to medium heat. Sauce as below.


Most early members are starters begging us to keep it simple so again, for beginners, the best move is to do your veg and seafood as normal, and without worrying about making a sauce yourself, add a good glass jar of any decent ready made sauce, tasty readymades from Aldi can be just 50p! TIP! Keep a spare jar as if you want to reheat its always best to add a fresh jar of sauce to rejuvenate your dish if reheating. If you insist on your own then fry your veg in a separate pan and in a separate pan simmer the contents below gently for 20 mins before pouring over your fried vegtables.

Home made sauce –

  • 2 tablespoons red curry paste
  • 1 tablespoon fish sauce
  • 2 tablespoons lime juice
  • 3 tablespoons brown sugar
  • 1 teaspoon garlic powder
  • Cup water
  • 1 can coconut milk
  • Olive oil

Serve with a nice dish of boiled basmati rice.
